Who said that carrots can be yummy? Well, one way to get kids to eat them is they come up with the idea themselves. No joke, my little one, Lexi, decided she wanted to cook after buying a recipe book in Palo Alto. She just said, “Mommy, I would like to cook. I have a good idea”!!! So, I asked what it was and here is what she came up with
Lexi’s Yummy Carrots Ingredients:
5 peeled carrots (I cut them originally in quarters but Lexi loves just circles)
2 pinches of parsley
1 small red onion
2 tbsp avocado onion
Directions: Take the onion and sauté it in the pan with some avocado oil. Once the onion change color or turn transparent, transfer them into ta bowl with the carrots and parsley. Add salt and pepper to taste.
Above is the pic of the final product. Lexi is very pleased with herself. I should mention two things: from time to time, I will be sharing on this blog healthy lifestyle choices. Eating raw carrots have so many benefits. The second thing that I should mention is that my little one, Lexi, who is 5 years old, is battling a rare brain cancer. She has been a survivor since she was 2 years old and my main goal is to help her thrive in every way possible. This includes eating right so that her little body has the energy to fight this deadly disease.
